The brewery consists of several areas within a total floor space of 5600 square
feet. The areas on the main floor include the pub, brew house, bottling area,
fermentation and conditioning rooms, and the warehouse. The pub, brew house
and bottling areas are open to the public. There is a mezzanine level on which
our business office, lab, and grain mill are located. The mezzanine level also
contains a customer seating area.
The pub is located in the front of the brewery. There is seating for 7 at
the bar, 22 at the tables on the main floor and 20 at tables on the mezzanine.
The brewery, BOP (the acronym for brew-on-premises), and pub are open the
same hours, so beer and food is always available during our open hours and
while you are brewing.
For your enjoyment, we also have DirectTV on the main floor and mezzanine.
Foosball, darts and a children’s play area are also available both
when you are brewing or just stopping in for a pint. The mezzanine, since
it is away from the bustle of brewing, is a great area if you are bringing
in a group to have a pint. You can enjoy your own space but still see the
brewing below.
The brew house is in the front of the brewery next to the pub. Here we have
the eight kettles which are available for your use, and our five barrel
brew house. All of the equipment was made by Heavy Duty Products in
Cambridge, Ontario, Canada, and is constructed of stainless steel and is
heated by low-pressure steam. Our five barrel brew house consists of a 5
barrel mash/lauter turn and a 6 barrel kettle. Both the mash/lauter tun and
the kettle are heated by steam. The brew house has two heat exchangers used
in both microbrewery and the BOP operations. The first exchanger is cooled
by water, the second by propylene glycol. This means that we can cool brews
to the appropriate temperatures for making either ale or lager beers.
Just behind the brew house and on the other side of the brewery are three 7
barrel fermenters and one 10-barrel fermenter which we use to make our commercial beers.
Further into the brewery is the bottling area, which consists of a table
with four automatic counter-pressure bottle fillers and a bottle washer.
The bottle washer washes 24 bottles at a time within two minutes. The
fillers are individual units and you hand-cap the bottles.
Also stored in this area and used solely for our commercial operations, we
have a four head automatic bottler built by Meheen Manufacturing and an automatic
labeler built by Inline Labeling Systems.
At the back end of the brewery is the fermentation and conditioning area
which consists of three rooms. The first room is maintained at 68 F for the
primary fermentation of ales. The second is maintained at 50 F for the
primary fermentation of lagers. The third room is the conditioning room
which is maintained at 33 F for lagering as well as cold-conditioning of
ales. The total space dedicated to these rooms is over 1500 square feet.
For the conditioning, carbonating and packaging of our commercial beers, we
use five seven barrel and five three and a half barrel English-made Grundy
tanks. We modified these tanks in 2003 and a unique draw-off at the bottom
of the tanks allows us to produce an unfiltered but bright beer.
